Cheat's cauliflower cheese

Cheat's cauliflower cheese

If you want another idea for using up leftover cream, this one's quick and simple. If you don't have quite enough cream, then crème fraiche or whole milk can be used to top up to what you need.

Recipe

  1. Cut the cauliflower into small florets. Place in a pan and cover with lightly salted water. Bring to the boil and simmer for about 5 minutes or until al dente. Drain well, toss with the butter, cream and plenty of salt and pepper.

  2. Preheat the grill to medium high. Place the cauliflower florets into a shallow ovenproof dish in which they fit in one layer.

  3. Combine the cheese and breadcrumbs and scatter generously over the top.

  4. Place under the grill until golden brown and toasted.

  5. Serve straight away as an accompaniment.

  6. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
