Welsh lamb, rocket and parmesan risotto

This lamb risotto recipe comes from Meat Promotion Wales and it is a great way to use up any leftover lamb. With the addition of a few ingredients, it is simply delicious! You can also add vegetables past their best to this dish, for example, celery and carrots. Chop and cook together with the onion in the recipe.

Ingredients

225g lean Welsh Lamb leg steaks, cut into small cubes
1tsp olive oil
1 onion, chopped
Remember to check your freezer for leftover onion you may have chopped and frozen previously
150g risotto (Arborio) rice
600ml stock
Make your stock with veg peel and ends for a tasty and nutritious alternative to stock cubes - and cheaper too!
Black pepper
50g sugar snap peas, sliced
50g frozen peas
Rocket leaves
Parmesan cheese

Recipe

    This recipe works perfectly with frozen meat. Check what you have in your freezer and defrost meat thoroughly before cooking. If using defrosted cooked meat, you can only reheat this meat once so only cook what you can eat.
  1. Remember to defrost your meat! Defrost in the fridge and use within 24 hours, or in a microwave on ‘defrost’ directly before use. 

  2. Heat olive oil in a saucepan and cook onion and lean lamb cubes.

  3. Add risotto rice and stir thoroughly.

  4. Add stock and bring to the boil, season and simmer gently for approximately 30 minutes or until the rice is cooked and all the liquid absorbed. (Add a little more stock to achieve your desired texture/consistency).

  5. During the last 5 minutes of the cooking time add sugar snap peas and frozen peas, stir together and cook until sugar snaps just start to soften.

  6. Season and finish off served with a handful of rocket and grated parmesan cheese.

  7. Remember to freeze any portions you dont eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy. Simply defrost in the fridge and use within 24 hours.
