Air fryer parsnip chips with smoked paprika, BBQ mayo dip

Roast parsnips are a seasonal favourite on the big day, but did you know they also make a fantastic snack when cooked in the air fryer? We’ve gone for a smoky flavour here but experimenting with seasoning is easy - why not try the chips dusted with Garam Masala, or garlic & herbs? Don’t have an air fryer? No worries - just preheat your oven to 200c (180c) and simply spread the parsnips on a baking tray. Toss the parsnips in a little olive oil and cook in the oven for 12 - 15 minutes, or until nice and crispy!

Ingredients

1kg parsnips, peeled and cut into chips
3 tsp smoked paprika
1 tsp garlic powder
1 tbsp olive oil
Good pinch of salt and black pepper
6 tbsp light mayonnaise (or vegan mayo)
2 tbsp BBQ sauce

Recipe

  1. Preheat the air fryer to 200c.

  2. In a large mixing bowl, toss your parsnips with the olive oil, garlic powder, smoked paprika, salt and pepper. Mix well to combine.

  3. Once coated, add the parsnips to the air fryer basket and fry for 10 - 12 minutes (depending on thickness), tossing them halfway through.

  4. Mix the mayonnaise and BBQ sauce together to make the dip and serve immediately with the crispy hot parsnip fries.
