Buffalo turkey burgers

Christmas leftovers just got a tasty makeover. Coat leftover turkey in a mixture of butter and hot sauce and pile it into bread rolls (we love freezing burger buns to have on hand for stuff like this). The hot sauce pairs perfectly with a mayo made with leftover blue cheese from the Christmas cheese board too!

Buffalo turkey burgers

Ingredients

Leftover roast turkey meat, shredded (approx 125g pp)
4 soft rolls
Shredded lettuce
Your favourite hot sauce
2 tbsp butter or margarine
Mayonnaise
Leftover blue cheese

Recipe

  1. Melt the butter in a large non-stick frying pan on medium heat.

  2. Add the shredded turkey meat and a good few dollops of hot sauce. 

  3. Stir well to coat the meat and heat until the turkey is warmed through. 

  4. Crumble some blue cheese into a dollop of mayonnaise and stir.  

  5. Fill the rolls with lettuce, the turkey meat and top with the mayo (and some more blue cheese if desired).
