Preheat oven to 200°C.
Combine the mashed potato, egg, grated cheese and chives well. Season with salt and pepper.
Grease a standard muffin tin using olive oil spray.
Shape the mixture into croquettes and roll in breadcrumbs.
Place croquettes into the muffin tin and spray tops with olive oil spray.
Cook in the oven for 16-20 minutes or until golden.
Serve with sour cream and chives.
