Tuna pasta

This Tuna Pasta dish is great for dinner time and utilises dried pasta, tinned tuna and chopped tomatoes. With the addition of a few fresh ingredients, you can feed a family of 4 for less than 60p per person!

Serves 4
Prep/Cook time: 20-30 minutes
a bowl of golden pasta mixed with tuna flakes and topped with a herb garnish

Ingredients

2 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
400g can chopped tomatoes with herbs
Add in any fresh tomatoes that need using up.
½ tsp chilli powder
1 tsp sugar
250g pasta bows (or alernative)
100g can tuna, drained
handful of basil leaves
Feel free to substitute for other dried or fresh herbs you have already - dried mixed herbs works just as well

Recipe

  1. Heat the oil in a pan, and cook the onions and for a couple of minutes until they begin to soften. Stir in the garlic, tomatoes, chilli and sugar. Season with salt and pepper and bring to the boil. Give it a good stir, then reduce the heat and simmer for 5 minutes.

  2. Meanwhile, bring a large pan of salted water to the boil. Add the pasta and cook according to packet instructions. Flake the tuna into the sauce alongside a good glug of pasta water and heat through. Drain the pasta, return to the pan and stir in the sauce and basil leaves. Serve with a generous grinding of pepper.
