These delicious meatballs are great for using up any spare mince.
450g (1lb) lean minced pork
1 large carrot, grated
1 onion, finely chopped
100g (4oz) fresh breadcrumbs
50g (2oz) unsalted cashew nuts, chopped
1 tablespoon tabasco
1 egg, beaten
Salt and Pepper
1 teaspoon mixed herbs of your choice
50g (2oz) butter
50g (2oz) wholemeal flour
200ml (1/3 pint) milk
200g (7oz) can chopped tomatoes
100g (4oz) mushrooms, sliced
100g (4oz) strong cheddar cheese, grated
Place pork, carrots, onion, breadcrumbs and nuts in a bowl, mix together.
Add the tabasco, egg, salt and pepper and combine all ingredients together.
Divide mixture into 16 and roll into balls and place in an ovenproof dish. To make the sauce melt butter, blend in flour and mixed herbs and gradually blend in milk, tomatoes and cheese. Bring to the boil, stirring all the time. Cook for 2-3 minutes, then add the mushrooms. Pour the sauce over the meatballs, sprinkle a little extra grated cheese on top, cover and cook in the oven as follows: Oven temperature: Pre heat to: 200°C / 180°C (Fan) / Gas Mark No.6 Position in oven: Centre Time in oven: 50 minutes Serve your nutty pork meatballs on a bed of spaghetti, or with mashed potatoes.
