Leftover lamb rogan josh

This delicious curry can be made using cubes of leftover lamb from your Sunday roast.

Ingredients

450g lamb shoulder, diced
This recipe also works perfectly with frozen meat. Check what you have in your freezer and defrost meat thoroughly before cooking.
4 tomatoes, quartered
2 red onions, chopped
Use up what you have. Spring onions, leeks or shallots work well here.
2 tbsp oil
2 tsp dried garlic or 2 garlic cloves, crushed
1 tbsp medium curry powder
1 tbsp ground coriander
1 tbsp dried coriander leaf
1 tsp turmeric
1 tsp tomato purée
½ tsp dried chilli flakes
200ml water
Juice of 1 lemon
Sea salt to season
Pilau rice to serve

Recipe

  1. Remember to defrost your meat! Defrost in the fridge and use within 24 hours, or in a microwave on ‘defrost’ directly before use.

    This recipe works perfectly with frozen meat. Check what you have in your freezer and defrost meat thoroughly before cooking.

  2. Heat the oil in a large heavy-based saucepan, add the onions and garlic and cook for 10 minutes.

  3. Add the turmeric, chilli, curry powder, ground coriander and the tomato purée and cook for a further minute.

  4. Add the diced lamb, water, tomatoes, lemon juice and coriander leaf.

  5. Simmer for 15 minutes, then season to taste and serve with rice.

  6. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy. Simply defrost in the fridge and use within 24 hours.
