Chicken Kyiv

This famous dish from Ukraine is a popular family staple and a tasty way to revitalise chicken and use up any bread past its best.

Serves 2
Prep/Cook time: 45 minutes
A halved breaded chicken Kyiv filled with a rich garlic sauce

Ingredients

2 chicken fillets
40g butter, softened
100g plain flour
2 cloves of garlic
Dill to taste
Pinch of ground white pepper
Pinch of salt
2 eggs
150ml of sunflower oil
100g of bread for breadcrumbs

Recipe

  1. Using a sharp knife cut a deep pocket in your chicken breast while not cutting through to the other side of the meat.

  2. Dice the garlic and mix in a bowl with the softened butter and dill. 

  3. Spoon the butter mixture into the middle of the chicken and press flat and seal with your hands.

  4. Season with salt and pepper and repeat for the other fillet.

  5. Beat the eggs and dip each fillet in the mixture.

  6. Cover the fillets in flour and finally in the breadcrumbs until fully coated. 

  7. Heat the sunflower oil in a frying pan and place the chicken in to brown off. 

  8. After the chicken has been fried on all sides place it on a baking tray.

  9. Cook in the oven at 180°C for 20 minutes to cook the meat through. 

  10. Remember to freeze any portions you don’t eat this time to save them from going in the bin. A great time saver for a simple meal another day when you may be busy.

    Defrost your frozen portions in the fridge and use within 24 hours, or in a microwave on 'defrost' directly before use.
