Roll citrus fruit on a hard surface with your hand. This makes them easier to squeeze when cut. Alternatively, put the fruit into the microwave, on high, for 10 seconds to release the juices.
If you have citrus juice left over when you are cooking, freeze it in ice cube trays. It is useful for drinks, dressings or all sorts of recipes that need a little juice. Try freezing lemon or lime slices in ice cubes – handy for drinks like gin and tonic!
When you need the juice from a lemon, microwave first on high for about 10 seconds and you get far more juice from it.
Often a recipe (especially Thai) will require a small amount of lime juice. What juice is left over can be placed in a small freezer bag and frozen until needed.
Roll the lemon up and down your work top, pressing hard. When you extract juice you will get more. Juice not required can be frozen in ice cube moulds to use another time - great added to water to give a refreshing zing.
