Our tips for Fish

  • Leftover fish

    wrap well any leftover fish and chill in the fridge. It's best eaten within a day of cooking.

  • Fish cakes

    To use left-over fish (any sort, but smoked is great) mix it with left-over mashed potato, season well, add herbs or capers if you like: bind with an egg and roll into balls. Roll these in left-over white or brown breadcrumbs and shape into patties. Fry until heated through. You can also use tinned tuna, salmon or sardines.

  • Fish cakes from fish pie

    Submitted by Jenny, Cumbria

    Thoroughly mush up a fish pie and make into fish-cake sized shapes, dip in beaten egg and coat with breadcrumbs (made using stale bread). Cook by frying, or brush with a little oil and bake in the oven. Rather nice with frozen peas and a very quick meal!

  • Use your microwave

    Submitted by Teresa Bovey, Nottingham

    Remember to use your microwave for things such as blanching vegetables, making apple sauce, melting jellies, sponge puddings, cooking fish and vegetables. It's not just for reheating and can save in energy costs.

  • Seafood stock

    When buying fish ask he fishmonger to fillet the fish, then also to give you the bones etc. You can also use the shells of prawns and other shellfish. Boil the bones etc in a little water, then strain through a fine strainer, or a piece of muslin to make excellent fish stock.

  • Flaky Fish

    Most fish can be flaked and added to scrambled eggs, tossed into spicy rice dishes or made into a pate by adding mayonnaise or cream cheese for a dip.
