Our tips for Eggs

  • Egg whites and yolks

    Eggs can be frozen successfully, but separately. For whites, make sure you label how many there are in each container. Leave whites to thaw naturally. They are ideal for making meringues: allow 50g caster sugar per white and proceed as normal. Yolks should be covered (in a container with a lid) and will keep for 4-5 weeks. Defrost and use yolks as normal in sweet and savoury dishes.

  • 'Best Before'

    'Best before': These dates refer to quality rather than food safety. Foods with a best before date should be safe to eat after the 'best before' date, but they may no longer be at their best. One exception is eggs - never eat eggs after the 'best before' date.   • Dating eggs

    I don't store my eggs in the frig but keep them in a basket on the kitchen window sill. Every time I buy a batch of new ones, I discard the egg box and write on each egg with a felt pen B/B date. That way, I use the eggs in order.

    when my bargain conscious husband turned up on Christmas eve with arms full of reduced items, I was reduced to keeping some food in the CAR in the drive.....Vegetables,eggs, drinks etc were fine!

  • How to test if eggs are fresh

    Fill a jug with water, place in your eggs. If your eggs lay flat on the bottom they are fresh and good to use. If your eggs stand on end on the bottom, they are not quite as fresh but still good to use. If your eggs float, they are bad and should not be used. When eggs go bad, gas builds up inside them, it is this gas which makes them float.

  • Dont know what to do with egg shells?

    Instead of throwing away egg shell, crunch it up and place around vegtables and plants to deter slugs. For good measure sprinkle some sand or salt around as well. Looks after your vauable plants and saves egg shells being wasted.

  • Use Up Leftover Potatoes

    Thinly slice leftover boiled potatoes and add to omlettes.

  • Flaky Fish

    Most fish can be flaked and added to scrambled eggs, tossed into spicy rice dishes or made into a pate by adding mayonnaise or cream cheese for a dip.

  • Great for lunch

    Leftover tortilla is great for lunch teh next day, just cut into wedges and pop into your lunch box.

  • Using lots of bits...

    My mother-in-law always encouraged me to use leftovers for meals and one of her favorites was fried rice. She adds anything and everything that is leftover. Mushrooms, courgettes, carrots, bacon, ham, chicken, egg, you name it she throws it in. Stirfries it with a bit of low sodium soy sauce. I get rave reviews whenever I make it and you can cook extra rice the night before with your dinner if you think ahead then you only have to fry it and cook up the meat and veg.
