Freeze any meat left over from a roast, like beef, pork and lamb to use at a later date in a tasty curry.
If you haven't got time to make a shepherd's pie from your leftover roast, whiz the meat with an onion in the food processor and pour into a freezer bag for later. It is then quick and easy to cook the prepared meat mixture from frozen to make a shepherd's pie or rissoles.
When making bolognese sauce or Shepherd's pie, I usually add a finely grated carrot and a finely grated courgette to the mix at the same time as the mince - this bulks it out considerably and you can't taste it. It's also a pain-free method of increasing vegetable intake.
If you have fresh herbs in the fridge that are going to go off, chop and sprinkle into ice cube trays, top with water, freeze and then put cubes into bags. Great for adding to soups, pasta sauces and stews.
Double up on your family favourites. Make a big batch of Bolognese sauce, flavour half with chilli and make the other half into a Shepherd’s Pie. Have one for dinner and freeze the other for later.
