If like me you love real porridge but hate washing the pan this is what I do - make a big saucepan of porridge, enough for a good few portions, and then divide it up and store in plastic containers in the fridge. In the mornings you can just pop it in the microwave, add your favourite topping and eat it straight from the tub! It keeps in the fridge for several days and even tastes good cold!
I buy the £1 bowls of mushrooms and peppers from the market. Now as there are only two of us I chop them all up put them into small amounts and put them straight into the freezer. When cooking a Spag Bol they get thrown straight in the frying pan, Also good when you find mushrooms cheap in the supermarket!
If you have bananas that are starting to turn speckly, chop them and freeze them. You can then put them in the food processor and process into delicious healthy "ice cream" it doesn't need sugar as the bananas are sweet enough but adding a touch of creamed coconut adds a lovely tropical flavour.
If I need a red or green chilli pepper for cooking I find you can only buy them in a bunch of 5 and then you use one and the other 4 go soft quickly. So, I buy them, reduced price if possible, in a bunch of 5 and use 1 and put the others in the freezer. Freezing them not only makes them last longer but they are easier to cut and to scrape the seeds out if you want and they cook quicker from frozen. I do the same with onions and reduced price herbs.
Onions can be diced and frozen if you have a few that need to be eaten before you have the time to use them.
