Spicy Sausage Rice

  • 1 onion, chopped 
  • 1 red pepper, diced 
  • 1 tablespoon olive oil 
  • 225g wild and basmati rice 
  • 450ml stock
  • 6 cooked sausages, sliced
  • 1 tub salsa sauce
  • Chopped parsley to taste


  1. Sauté the chopped onion and diced pepper in the oil until tender. 
  2. Stir in the rice and stock, cover and simmer for 20 minutes until the rice is tender. 
  3. Stir in the sausages and sauce and simmer uncovered over a medium heat for a further 5 minutes or until hot. 
  4. Add the chopped parsley and serve in bowls.
