Lick your bowl yam soup

Turn tired yams or sweet potatoes into a delicious, warming soup. Or after Hallowe’en, swap in your left over pumpkin instead!

Ingredients

Serves 4

  • 3 yams or sweet potatoes, peeled and cut in ½” slices, then quartered.
  • 1 large or medium onion
  • 1-2 garlic cloves, peeled and crushed
  • 1 potato, peeled and roughly chopped
  • 1 carrot, peeled and roughly chopped
  • 1 celery stick, roughly chopped
  • 1.1 litres of chicken stock from Stocks
  • Crème fraiche

Instructions

  1. In a large saucepan put in the yams or sweet potatoes, onion, garlic, potatoes, carrot, celery and cover with chicken stock.
  2. Bring up to the boil, then simmer for 20-30 min until the vegetables are very soft.
  3. Remove from the heat and allow to cool slightly.
  4. Ladle the soup in batches into a blender and puree until smooth. Alternatively, use a hand mixer and puree the soup directly in the saucepan.
  5. To serve; ladle into warm soup bowls and garnish with a swirl of crème fraiche and a sprinkling of flat leaf parsley.

    I make something similar, only spicier - I soften the onions and garlic in a very little oil or butter and add fresh ginger, ground coriander and a few chillie flakes, then add the veggies and stock and cook pretty well as above. I finish with some garam masala towards the end and fresh coriander if you have it.

    I have also used coconut milk, creamed cooconut or a little peanut butter ( its great for using up the end of the jar ) if its about. Also you don't even have to make it in quantities given - last week I used 1 tired sweet potato, an equally tired carrot and a small onion alongside garlic and spices etc - this made one very generous bowful plus another 2 small portions to freeze down :)
