Mixed Citrus Salad

Great for kids

This is a delicious fruit salad that can be enjoyed for breakfast or served as a refreshing pudding. Use a serrated knife to cut away the pith from the fruit.

Ingredients

Serves 4

  • 4 blood oranges, peeled, pith removed and cut into thick slices
  • 1 large grapefruit, peeled and cut into segments
  • 1 orange, peeled and cut into segments
  • 2 tangerines or clementines, peeled, pith removed and cut into segments
  • 4 crushed Black peppercorns
  • Mint Herbs
  • To serve Yoghurt or Crème fraiche

Instructions

  1. Divide the fruit between plates. Crush the black peppercorns and sprinkle over the fruit with the mint leaves.
  2. Serve Greek yogurt or crème fraiche

Health Note

Grapefruit! Try it in yellow, pink or ruby red. Grapefruits are not related to grapes in anyway, the name comes from the way the fruit hangs in grape- like clusters on the grapefruit tree. Eat citrus fruits to ensure that your body is getting plenty of essential Vitamins such as A and C.
