This recipe is good for using up bits of fruits that are past their best and are not quite good enough for fresh fruit salad. Almost any fruit can be used such as mangoes, apricots, pineapple, peaches, nectarines, grapes, and kiwi fruits. Delicious served warm with vanilla ice cream or serve on top of your morning cereal.
Serves 4
4 small bananas, peeled and cut into chunks 2 apples, pears or plumes peeled, cored and cut into chunks 2 kiwi, peeled and sliced 100g black or green seedless grapes 200ml orange juice ½ teaspoon nutmeg, cinnamon or strips of vanilla pod
Great in buns, cakes, and puddings.
This can also be cooked in the oven. Preheat the oven to 180°C (350°F) mark 4. Put the fruit and spices in an ovenproof dish, cover with foil and bake in the oven for about 15-20 minutes or until the fruit is just soft and bubbling. Lightly stir in the grapes.
