This is a great leftover recipe that can be made with any vegetable leftovers from the Sunday lunch. Serve with a poached, fried or scrambled egg and crispy bacon or with poached smoked haddock fillets or grilled trout.
For pastry making or to thicken sauces, soups, stews and casseroles.
Unsalted is better for cooking.
Easy spread butter is ideal for sandwiches and toast.
Add to eggs for omelettes, grate onto soups or salads.
It is tasteless and heats to a high temperature so is a good all round oil.
Ideal for pan-frying, mayonnaise, dressings and marinades.
Best used as a condiment.
Consider tablesalt, sea salt or crystals.
Sea salt’s pronounced and salty flavour means less is required to season food.

My family comment on bubble and squeak is that never enough is made! I don't make it into individual cakes just start off the onions in a big pan and keep adding and cooking slowly! Also put in either some branston or brown sauce and a small amount of grated cheese, the whole lot gets shoved under the grill for the cheese to melt and the top crisps. Serve with cold cut and more pickles - heaven!

Not only, as a now bereaved man in my seventies, have I learned delicious leftover soups but the recipes anyway, as I learn to cook for myself and others, are really simple and helpful.

My bubble & squeak is onion & bacon cut-up and fried, then add cooked mashed potato, cabbage and cold chopped cooked meat (lamb or beef roast). I like this with tomato sauce. My husband likes the brown bits on the bottom of the pan!
