Fennel, apple and smoked trout salad with Tzatziki

Great for lunch

A healthy salad for one that will use up any spare Tzatziki.

Serves 1

  • Half a bulb of fennel
  • Half a red apple
  • 50g smoked trout
  • 4 tablespoon tzatziki
  • Mixed salad leaves

Instructions

  1. Thinly slice the fennel. Core the apple and chop into bite-sized chunks.
  2. Mix together with the trout and tzatziki.
  3. Spoon on top of the salad leaves and chill until required.
