Fish Lovers Hate Waste. Nothing's better than a nice bit of fish. So I always keep an eye on the use-by-date. If it's getting close, I'll either freeze it, or use it. Perfect.

Most fish can be flaked and added to scrambled eggs, tossed into spicy rice dishes or made into a pate by adding mayonnaise or cream cheese for a dip.
To use left-over fish (any sort, but smoked is great) mix it with left-over mashed potato, season well, add herbs or capers if you like: bind with an egg and roll into balls. Roll these in left-over white or brown breadcrumbs and shape into patties. Fry until heated through. You can also use tinned tuna, salmon or sardines.
