Chicken Lovers Hate Waste. I'd be lost without chicken as it's a doddle to cook. My top tip is to cut it into small chunks and freeze it. It'll defrost in no time for a quick dinner. Brilliant.
Freeze any meat left over from a roast, like beef, pork and lamb to use at a later date in a tasty curry.
Cut chicken breasts into strips before freezing, open freeze, then pack into bags, they can be quickly added to stir fries and cooked from frozen.
If you have roasted a chicken, freeze the carcass. Once you have two or three, boil them up for a couple of hours with two or three pints of water, a few chopped celery stalks, onions, carrots, a bunch of parsley and bay leaf to make chicken stock. Measure into pint portions and freeze them to be used whenever you need it.
