What’s the Ultimate Rescue Food? The one ingredient that transforms just about anything into a main meal. An ingredient that means you can empty the fridge at the end of the week and it will spin your leftovers into a fabulous feast. The magic ingredient that pulls it all together.

I’m torn between eggs…

There isn’t much you can’t chuck in to an omelette. I don’t mean one of those elegant, delicate French types – delicious as they are – but a more robust, hearty tortilla or frittata. Potato, pasta, sausage, ham, bacon, chicken, onion, peas, peppers, mushrooms, sweetcorn, courgettes, tomatoes, cheese… Just add eggs and you’re away.

And rice…

But then you can do the same with rice – a bit like paella or the special fried rice you get at the Chinese take away.  Rice can turn all manner of leftover scraps into a star-studded spread. The kids love finding prawns and turkey, carrots and broccoli, mince beef and roast pork, peppers and beans all on the plate together. Each mouthful a surprise!

My vote will go to tomatoes – fresh, tinned, squashy or firm – I love them and am never without. I add them to sausages when I bake them in the oven. Tomatoes get grilled to make the fry-up healthier. I add the squishy fresh ones to a tin of tomatoes when making a pasta sauce. This one takes minutes. In a frying pan with a drizzle of olive oil, add garlic, optional chopped anchovies and cook for a min. Add a tin of toms and any fresh ones that need using up. Heat through. Season and add basil and mix in a handful of grated cheese and serve with pasta. Ready in the time it takes to cook the pasta – what 6 mins!
