I don’t know if it’s the Irish gene in me, but we eat a lot of potatoes in this house. This means there is always some variation or another of cold potatoes in the fridge. They’re cheap and the ultimate comfort food. Here are my three favourite leftover spud ideas…

Lovely fishcakes…

Kids love fishcakes. Mix together your leftover mash with tinned tuna or salmon, chopped spring onions, parsley, and a spoonful of horseradish for a bit of a kick. Shape into fairly compact patties, dip in flour and fry. Experiment with other types of potato cake – use cooked ham or bacon, cooked veggies, tinned sweetcorn, or grated cheese… perfect for the children’s supper.

Easy potato bread…

Potato bread is really easy to make and is great with a fried breakfast. Just add some salt and plenty of plain flour to warm buttery mashed potato until you get a stiff dough. Roll the dough into a flat circle, cut into quarters and cook on a hot griddle or in a frying pan until golden. Try adding some chopped rosemary, a handful of oatmeal or some cooked onion, as the mood takes you.

Bubble & Squeak…

It’s not often that there are many roast potatoes left, because I tend to snaffle the last ones myself, having dipped them in the gravy pan under the cover of clearing up after the Sunday roast. However, on the rare occasion that I really can’t fit in another morsel, I use them up in bubble and squeak. I chuck in any leftover cooked veg with some onions, garlic and bacon, and stir it around the frying pan with the chopped roasties until gorgeous and crispy. A shake of paprika adds a bit of oomph.
