It’s Chicken Tonight!

I seem to have accumulated enough chicken to sink the Titanic.

On my way home from a late meeting, I bought a ready-roasted chicken to have with salad and baked potatoes. But I hadn’t bargained on The Husband being uncharacteristically on the ball. He had also bought one and while he gets top marks for thinking ahead I’ve now got to figure out what to do with it all.

There’s some chorizo in the fridge and peppers and prawns in the freezer, so a jambalaya would be easy. Or I could use my emergency packet of puff pastry and knock up a chicken and leek pie to freeze for the weekend, and the little boys could have chicken and chips or chicken pizza muffins.

It’s Chicken Tonight!

With all this chicken it’s definitely off the menu next week, or I suspect there’ll be a family mutiny!

If i’ve still got chicken leftover, I may indulge in Potted Chicken which is a lovely old-fashioned way of preserving meat or fish and a great way to use up leftovers. There are lots of different ways to do it, using various herbs and spices, a splash of wine or brandy or a squeeze of lemon juice, but the fundamental idea is simple. It is really just a mixture of chicken and butter, made into a smooth paste either by pounding by hand or whizzing it up in the food processor. It’s great for spreading on hot toast and I can freeze it, which means I could bring it out again in a couple of weeks when they’ve stopped complaining that it’s chicken tonight, again…

I like to cook chicken leftovers on the bbq the day after with some marinade, which tastes great.
