I have never had a lot of money so whenever I have cooked a joint with a bone in it I always boil the bones or carcas for soups/stews or stock. Fishcakes can be made from from left over potatoes, dried up ham and herbs. Wilted lettuce leaves made into a soup with a little soft cheese and herbs is a big hit with my family.
