Having spent many years as a student, and now as a mother, I cannot afford to throw food away, and am genuinely shocked to hear of people throwing fresh meat away when it could so easily be frozen! I always write a menu of what we are going to eat every week, and then buy the ingrediants that I am going to need. Any left over portions are then frozen, as a handy stand-by when I have too little time or energy to cook from fresh. It has always bothered me the amount of food that is thrown away that would not ordinarily be eaten, such as potato peelings and vegetable scraps, but I am now the proud owner of a wormery. I now feel much happier disposing of, for example, cauliflower stalks and leaves, knowing that at least someone is getting to eat it, even if it is a worm! My top tip - look out for old cookbooks from the Second World War for an amazing variety of recipes using left overs. It's amazing what you can do with a bit of left over mashed potato!
