I have started to buy organic meat which means I use less meat and more vegetables. I bulk things like casserole out with tinned butter beans. I make enough for four people on a Sunday then we have another meal in the fridge that we only have to do veg for. I also make massive shepards pie and freeze it in portion sizes - brilliant for an after the pub snack! On a Sunday I make soup out of the weeks left over veg or reduced ones I find at the supermarket - healthier and cheaper in a flask for builder boyfriend!!
