I have an unpredictable work schedule - I work from home, work away and often come home late and am to tired to cook. I make up 2 portion meals at the weekends like sheppards pie, fish pie, fish cakes and vegetable bake and then freeze them for use during the week. Saves time, money, portion control saves waste and food doesn't sit in the fridge being not used because I have had to go away on business. Husband approves cos he gets fed properly and all he has to do is pop it in the oven for us, I do some frozen veg when I get home. Ita all fast and easy.
