This is a great initiative. I hate to throw away food but with young children it’s sometimes difficult to avoid. If food remains uneaten, I will try to think of another use. Just yesterday I had quartered some oranges for Harry and Rose and a few segments were left over. I put them in the fridge and then for supper I par-boiled some beetroot before roasting this with the orange segments and juice– the sweet but citrus tang of the oranges combines beautifully with the beetroot and cuts through its sometimes ‘earthy’ taste. Delicious. Left over veg usually end up in a soup pot to make a nutritious and light lunch or supper, and of course any organic matter that has really gone over ends up on the compost heap.
