I recently borrowed some books from my mother-in-law. One was Mrs Beeton's Household management and the other was an old M&S freezer cook book. I did not know until then that you can blanch any veg that is about to be past its best and then freeze them. I was always finding rotting carrots and celery in my fridge. Now I just freeze them. They can then be used for stocks and sauces straight from the freezer. I do compost but now I am trying really hard to use what I have, or freeze it if I have too much. I just can't believe how much food I was throwing away. The other thing I now do is not shop for more food until everything I have is used up - this requires a bit of research looking for interesting recipes on the internet. This is a fun challenge, not a chore!
