I am amazed and disappointed at the number of people who throw away the pumpkin flesh and seeds during Halloween celebrations. It is such a waste and a pity that more people, especially young Mums on a tight budget don't know how to make soup and other simple homely recipes to use pumpkins. The seeds too are easy to roast and so good for us- they taste better than peanuts! Go on- give soup a try and soon you'll be a soup addict and trying easy and nutritious soups that all the family should love. Try spicing it up with ginger or curry spice for a heart warming autumnal and winter treat and don't forget some pumpkins, like 'Crown Prince' last up till the spring in a cool,dry place. Very handy when the cupboard seems bare!
