Those dishes that you throw together with leftovers often turn out to be the best ones. It’s really shocking when you hear about all the food that we throw away here in the UK, lots of which could actually have been eaten. I think it’s about being a bit adventurous and experimenting with different ingredients that you happen to have in your fridge. Planning is important too – I guess it’s similar to the way we work in a professional kitchen, making sure that we order the right quantities for each day, so that we don’t end up with lots of waste
