Banana and Maple Syrup
The kids will love making these. Add a pinch or cinnamon to the batter if you like. Stack the pancakes in a pile, slice the speckled bananas and scatter over the plate. Drizzle with maple syrup and serve with Greek yoghurt or vanilla ice cream and extra maple syrup.
Orange and Lemon Zing Pancakes
A delicious pudding that use up any oranges past their best. Cut away the skin of oranges and cut across the orange into circles. Heat a knob of butter in a frying pan and add the orange slices, cook over a medium heat for 2 minutes. Add a few tablespoon of lemon curd and quickly stir around until the curd has melted. Remove from heat and spoon the oranges over the warm pancakes and drizzle with the warm lemon curd. Serve with cream or ice cream.
Scotch Pancake Pizza
Very quick and easy and for kids’ parties, lunch boxes and picnics. Use up any leftover over meats from the fridge. Arrange the savoury pancakes on a greased baking tray. Cover each one with a tablespoon of tomato pasta sauce from a jar and spread to the edges, add a few pieces of the ham or salami, a cherry tomato, flesh side up, a pinch of dried oregano and a sprinkle of leftover cheese. Season. Place in the top of the oven for 6-8 minutes or until the cheese has melted.
Smoked Fish Topping
A great quick supper dish served with a green salad. Add some chopped spring onions or chives to the batter. Mix crème fraîche with a little horseradish in a bowl and season, to taste and add to a tin of tuna. Place the savoury pancakes onto serving plates. Top with a spoonful of the tuna cream, some slices of smoked salmon or mackerel flakes and sprigs of dill.
American Breakfast Pancakes
Treat yourself to this gourmet breakfast! Add blueberries and a pinch of cinnamon to the sweet pancake batter. Cook the pancakes using the fat from the grilled bacon. Arrange pancake on plates, top with grilled bacon, fried eggs and drizzle with maple syrup.
