Fruit Compote
If you have any leftover fruit sitting in the fruit bowl that is past its best, try cooking it. Peel, core and roughly chop, put into a pan with 2-3 tablespoons caster sugar and cook over a low heat until soft. Heat pancakes through, fill them with the fruit compote and serve with yoghurt or ice cream.
Chocolate and Banana Pancakes
Great for using up speckled bananas. Add 1 teaspoon cocoa powder to the pancake mix. Heat a knob of butter in a frying pan, add soft brown sugar and cook until dissolved, add cut up the bananas with a drizzle of rum and cook until tender, stir in cream then spoon into chocolate pancakes, roll or fold and serve with ice cream.
Apple Pancakes
For an unusual way of serving pancakes. Core dessert apples and slice into thin apple rings. Heat a pancake pan; pour in enough batter to coat the bottom of the pan. Add a few of the apple rings in a single layer, pour over more batter to cover the apples and cook for a minute until lightly set. Flip over quickly and cook the remaining side. Serve warm sprinkled with a little sugar and lemon juice. Could use other fruits such as pears, berries, pineapple and apricots.
Sweet Pancake Pasta
For a delicious dessert. Roll up cooked pancakes into a cylinder and thinly slice the pancakes in strips. Place 4 tablespoons caster sugar, a knob of butter and about 200ml orange juice in a frying pan and heat gently until the sugar to dissolves then bring to the boil. Boil for 3-4 minutes until quite syrupy. Add the strips of pancake and stir into the sauce; cook for 1 minute. Serve with berries or chopped fruits that are past their best and ice cream.
Lemon and Orange Pancakes
If you have the odd lemon or orange hanging around. Squeeze the juice form a lemon, orange or lime. Sweeten with a little runny honey and drizzle the juice over the pancakes while still hot.
