Sandwiches
When is a sandwich not a sandwich? When it is a wrap, tortilla, bagel, baguette, pitta or panini! Whatever your bread of choice, its great for free-lunching.
Pitta breads make handy pockets for last night’s chicken stir-fry, or leftover roast vegetables and hummus. Yesterday’s Mexican beans or chilli con carne are great rolled up in a wrap.
1 million loaves of bread get thrown away each year, buy why when a sandwich has to be the staple lunch? Cheese and ham are the perfect ingredients for the traditional sandwich. But try cheese with coleslaw and lettuce or ham with mustard and tomato for other classic but delicious combinations. Baguettes filled with salad and slices of cold chicken or beef with a lick of horseradish are fantastic for lunch.
If you have access to a microwave at work, then you can reheat your leftovers at lunchtime. Why not swap your shepherd’s pie for someone else’s chicken korma?
Even the smallest amount of leftovers from a main meal like chilli, bolognese or curry can be used as a delicious stuffing for a jacket potato.
Pasta and couscous make a great salad with leftover roast vegetables, cherry tomatoes or sweetcorn.
